Some analysis again

YO people.
Played a big session today, starting out with some PLO (obv losing), then switching to NLH (obv not losing).
I recently started playing deep tables (with 200BB starting stack), and its fun. i am not very happy with my play today (although i am reasonably happy), thats why im gonna post some hands and say what i had thought at the time and what i now think is right.
So lets start with this hand:

Yeah, you all wanna know what he had, right. But lets look at the way i played the hand, first:

So, this guy had just sat down, i had played one hand with him where i 3bet ip, he instacalled oop and check-raised my cbet on a middling rainbow board, i folded, and then 1 or two hands later i pick up 88. He raises the SB, i 3bet, he calls. Now when he pots out AAT, i know two things:
First: He is a fish.
Second: He can play an ace this way, BUUUUUUUT my mental eye saw some total unconnected crap in his hand, like 44, 59s, 35s,..... 
In his mind, this is the best way to rep a big hand: Bet big, fast, 3 streets. So i called him down, and he shooooooooooooooowed.... AJ. Naa, just kidding. 57s. :-)

So, this hand leaves me kind of befuddled. We have a regular here, who calls a minbet by a fish on a drawheavy board, and then 3bets my raise. Furthermore, he cant have AA,KK,AK. So i now have to believe that he plays K8 or A8 or 88 this way. So people, message to you all: If you manage to play your hand that way and then actually hit something that beats the nutflush, im gonna pay you off. Where under normal circumstances i would fold the river, this time i was so tilted by his play that i called and got shown K8, and yeah, maybe you can fold the river, but i really had to see it, cause this guy plays like 15 tbls several hours a day, hes a losing regular, and i dont quite see anybody competent play this line with anything decent, so if thats the case (as i cant have a boat) he could have a biggish flush on the river, who the **** knows.

Yeah, this hand. I cbet this board cause he calls waaaay too many 3bets, he cant really raise there with a mediumstrength hand (cause of stacksizes), and i can make him fold some pairs. When he raises me i thought that he could have TT, maybe veeery rarely QQ, obv KJ and some flushdraws like 89s, J9s,.... or slowplayed AA,KK.

Could he be bluffing there? Yeah, maybe, hard to say. So that was my logic, i jammed it in, he had AA, i had 21% equity, i dont like my move a lot, i think a check behind on the flop is gonna be best, if i cbet i have to fold to a raise with these stacksizes.

So, thats the last one. I 3bet him, cause hes a fish, and he could minraise every ace here (lets say all the better aces like A7+), + every draw, turn blanks, i think you could make an argument for folding if he bets, but if he has an ace hes gonna bet, so its tought, wellwellwell.
The mooost important point about this hand actually is his 3bet%.
Why? Cause if he doesnt 3bet, hes gonna have AQ here, QQ. Im kind of drawing dead against those. So, this dude didnt really 3bet at all, i should just fold the flop (insane as it sounds).

Very interesting first hand. I think he would surely have found a better spot to win.
