The stereo option has the effect of listening to one voice in the right earphone and the other voice in the left earphone. Why use this option?
Is it possible to edit the voice channels independently and maybe even the volume?

Yep, the final produced video will be produced in mono, but if you use the stereo option you can correct for when one person coughs loudly while the other is talking, drops their mic, or has other audio problems that need to be corrected -- these sorts of things are nearly impossible to correct in a mono-recorded track.
