It's because they are 2-tabling so the videos are much larger than the 1-tabling videos.
Converting 2-tabling videos to the ipod format makes them almost impossible to watch as the maximum resolution for 5th-gen ipods is 320x240 and 2-tabling videos are 1600px wide.
If you want to try to convert it on your own it's pretty easy to do -- take the full MP4 version and use a program like the Videora Ipod Converter.

I'm not the tech ninja but I believe it has to do with the screen resolution while playing 2 tables - it just wouldn't look good on an iPod.
