Sure but variance is already taken into account because the winrate is an average.

This error is the same reason the Kelly criterion breaks down. Winrate is an average, but it is a moving average and is never truly known. So, you may have been running good (or running bad, but running good is more dangerous when you make these sorts of calculations), and more important in today's mid-stakes online world, your true winrate may drop drastically, but it can take a long time for you to figure that out. These facts mean you need to be far more conservative than standard variance calcs / standard plug-and-chug web sites tell you if poker is your sole income. The best hedge is to have a day job or a part-time job or a trust fund or a rich S.O.
