I'm kind of new at PLO so excuse me if this is a dumb question. This hand looks like an obvious 3 betting hand, but would you 5 bet all in with this hand if you get 4 bet?

It will depend on their 4betting ranges. There are many players who will only 4bet AA**, strong KKs in which case you are a significant dog.

Against an unkown opponent, would you fold this?

Depends on stack sizes and stakes. I would generally fold to 4bets if it's a spot they'll probably 4-bet only AA.
