This happened to me a few times in my session last night, and it's getting right on my nerves...
Ok, I have AQo and raise pre. Get one caller, player on my immediate left who is inexperienced and very bad.
Flop is Q

I bet 3/4 of the pot and the guy calls.
Turn is 2
I bet 3/4 of the pot and he calls, I'm putting him on the flush draw...
River is 2
I check and he bets 1/5 of the pot.
Odds too good to fold right?
So I call and he shows J

Couple of hours later and I'm in a pot with the same player... This time I've moved seats and he is two on my left. I raise pre with K

and get two callers.

I bet £25, one fold, and this other guy dwells for a while, then calls.

Turn Q
Again I'm thinking of the flush draw. He checks to me and I bet £45. If he calls this, he has approx £50 behind... My plan is to fold if his flush comes in and he bets. But I bet small enough so that he will call, as I don't think he calls if I bet much stronger...
So he calls the bet and now the pot is £117
River 2
He shoves; the count is £56
I call. Wtf??? I told myself I wouldn't. But it was two pair this time, can't fold that surely...
He shows A

So do I learn to trust my reads completely, no matter what pot odds I'm getting?
Do I keep calling, knowing that sometimes my reads will have been wrong and I'll win the pot?
Or should I just bet more on the turn to make sure he folds??

I like hand 1. Hand 2 I'd bet more on the turn. The pot is 87 on the turn, and I think 65 is better than 45.
The one think I've learned about flushes is that it's fairly obvious to people when they've come in, so people who wouldn't ordinarily bluff can sometimes find a bluff when they think you don't have a flush when it comes in. So I tend to call on flushing rivers.

On that second hand, looks like he only has $95 on the turn. I've met many players who will call a shove there. Sure he makes a small mistake if he calls, and you force him to fold correctly if he folds. However, I like to give him the opportunity to make a large mistake.
Bet sizing could change things a bit here, as well. Bet $35 on the flop, and you'll have 107 with $85 remaining on the turn, which are probably better sizes to shove with.

Math tells you that you should´ve jammed. 
If you shove and he folds 100% - you win the pot in 100% which is net profit of £87.If you bet £45 and he has 20% equity - you win (£87 + £45) = £132 in 80% = £105.60 and lose your £45 in 20% for -£9 - for a total net profit of £96.
So, the relative EV of betting smaller vs. jamming is merely £9. Not that I´d jump up and down for that.
Add a non-zero-percentage that he´ll call your shove with AK and even flush draws anyways - and jamming is by far the superior line.

If we know he is a fish we don't have to decide between betting 1/2 pot and overbet-jamming. Small bet makes his call barely a mistake if you stack off on the river flush card, but overshove could be scaring him away too often. I would bet around 3/4 pot because it might make him much more likely to call with a flush draw with terrible odds.

Exactly that!
Bet big OTT, he has a pot size bet left, so there is no point betting half pot, you are missing too much value. Plus, he might have not clue of what pot odds are and call you with a lot of draws. Get max value from these guys that calls too much when you are ahead.... The bigger you bet, the bigger his mistakes become!
