Something I really like to do in these spots is to over bet, make it $15 on the flop and shove the turn. There's fish and there's FISH and this guy wants to get his gamble on - think of the times you goofed around at meaningless stakes or something, this is what he is doing so that line is the most EV I'm almost sure of it.
