is this ever profitable? for example 3 betting to steal but folding to shove, or 3betting to iso and folding to a big stack?

yes my raise was too big 6k would have been bigger. still think I can fold to a shove though (probably wouldn't but still think I have that option)

I would say you have to adjust to the players and any game-flow, there is not going to be any set plan.
The first one does look a poor choice, the player can just about go through a blind and is utg so could be stronger than normal, bound to call and so not a great looking stack to aim at. This player raise 3bbs and hasn't any left so you are going to a showdown with AJo vs the utg. As an iso it looks a bit big when you also might have to fold vs two later players.

The second- depends on the player, the size seems a touch small but this is great if you think the V. is easy to push off a tight range. The fold to the allin seems reasonable unless you have a pretty good read (you probably aren't massively off the required equity).

Don't like the 2nd one at all without some stats - he's opening UTG+2 so his range is going to be too tight to "resteal"
